Nutty Granola and Energy Bites

Nutty Granola:

- 4 cups old fashion oats

- 1.5 cups raw nuts, chopped

- 1/2 cup sunflower seeds

- 4 tablespoons raw honey

- 1/4 cup of unsweetened coconut flakes

- 4 tablespoons melted coconut oil

- 1 teaspoon vanilla extract

- 1/4 teaspoon fine sea salt


Instructions:

1. Preheat oven to 185 F

2. Combine all ingredients in a mixing bowl, mix until ingredients are combined and coated.

3. Spread the mixture in a thin layer on a baking sheet lined with a slip mat or parchment paper. Bake for 1 hr, until lightly toasted.

4. Let cool and then enjoy


Cashew Energy Bites: makes 12 balls

- 1/2 cup rolled oats

- 1 cup raw cashews

- 1 cup of pitted dates

- 1 teaspoon of ground ginger

- 1 Tbsp of chia seeds

- dash of vanilla extract


* In a food processor, add the oats and process until slightly chopped. Then add all the other ingredients and process till the ingredients come all together. Then roll the balls in your hand into small balls and place on a baking sheet, place them in the fridge for 20 to firm up and then eat and store the rest in a freezer quart size bag.



Protein Power Bars:

- 1/2 cup of cashews

- 1/2 cup of walnuts

- 3/4 cup of pecans

- dash vanilla

- 1 cup of pitted dates

- scoop of chocolate protein powder

- 1.5 Tbsp of coconut oil melted


* In a food processor, put all the ingredients in and process until they come together. If you can pinch them and they stay together then they're good, add a few more dates if they don't. Place the mixture in a 8x8 pan with a lid, use a spatula to press them down so they say together. Refrigerate them for thirty minutes, take them out and cut them down the middle and then cut them into 1.5 inch bars. Enjoy them now and you can wrap the rest individually in plastic wrap and refrigerate.
